Description

This easy recipe for The Best Mac and Cheese Ever is pure comfort food in every creamy, cheesy bite. It is a quick dinner, family favorite, and one of those irresistible food ideas that works for weeknight dinners, holiday sides, and cozy homemade meals. With tender elbow macaroni, a rich cheddar cheese sauce, and plenty of melty goodness, this easy dinner delivers classic comfort and satisfying flavor every single time.

Ingredients

Scale

3 cups elbow macaroni

4 tablespoons butter

1/4 cup all-purpose flour

2 cups whole milk

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 1/2 cups mozzarella cheese, shredded

4 ounces cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon fresh parsley, chopped

Instructions

1. Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente. Drain and set aside.

2. In a large pot or deep skillet, melt the butter over medium heat.

3. Whisk in the flour and cook for 1 minute until smooth and lightly bubbling.

4. Slowly whisk in the whole milk and heavy cream until the mixture is smooth.

5. Cook, stirring often, until the sauce begins to thicken.

6. Reduce the heat to low and stir in the cream cheese until fully melted.

7. Add the sharp cheddar cheese and mozzarella cheese a little at a time, stirring until smooth after each addition.

8. Stir in the garlic powder, onion powder, salt, black pepper, and paprika.

9. Add the cooked macaroni and stir until every piece is evenly coated in the cheese sauce.

10. Serve hot, topped with fresh parsley and a little extra paprika if desired.

Notes

Use freshly shredded cheese for the smoothest sauce because pre-shredded cheese does not melt as cleanly.

Keep the heat low when adding the cheese so the sauce stays creamy and does not turn grainy.

Add a splash of milk when reheating leftovers to bring back the silky texture.
