Ingredients
3 to 4 pounds beef brisket
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons olive oil
2 large yellow onions, sliced
4 cloves garlic, minced
2 tablespoons tomato paste
3 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
4 sprigs fresh thyme
2 bay leaves
4 large carrots, cut into chunks
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 325°F.
2. Pat the brisket dry with paper towels and season all over with salt and black pepper.
3. Heat olive oil in a large Dutch oven over medium-high heat.
4. Sear the brisket for 4 to 5 minutes per side until deeply browned, then remove it to a plate.
5. Add the sliced onions to the same pot and cook for 5 to 6 minutes until softened.
6. Stir in the garlic and tomato paste and cook for 1 minute.
7. Pour in the beef broth and Worcestershire sauce, then stir in the brown sugar.
8. Add the thyme, bay leaves, and carrots, scraping up the browned bits from the bottom of the pot.
9. Return the brisket to the pot, nestling it into the liquid.
10. Cover tightly and bake for 3 1/2 to 4 hours, or until the brisket is very tender.
11. Remove the brisket and let it rest for 15 to 20 minutes.
12. Slice against the grain and spoon the onions, carrots, and braising sauce over the top.
13. Garnish with fresh parsley and serve warm.
