1 pound ground turkey

2 cups herb seasoned stuffing mix

3/4 cup chicken broth

1/2 cup dried cranberries

2 large eggs

1/2 cup finely chopped onion

1/2 cup finely chopped celery

2 tablespoons chopped fresh parsley

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil or melted butter

1/2 cup cranberry sauce for serving


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper or lightly grease a baking dish.

2. In a large bowl, combine the stuffing mix and chicken broth. Let it sit for 3 to 4 minutes so the stuffing softens.

3. Add the dried cranberries, onion, celery, parsley, garlic powder, salt, and black pepper. Stir to combine.

4. Add the ground turkey and eggs, then mix gently until everything is evenly combined.

5. Roll the mixture into 1 1/2 inch balls and place them on the prepared baking sheet.

6. Brush or drizzle the tops with olive oil or melted butter.

7. Bake for 20 to 25 minutes, or until golden brown and the centers reach 165°F.

8. Let rest for 5 minutes, then serve warm with cranberry sauce.


Notes

Do not overmix the turkey mixture or the stuffing balls can turn dense.

Finely chop the onion and celery so the balls hold together more easily.

For extra color and flavor, sprinkle a little fresh parsley on top before serving.
