2 cups shredded potatoes (russet or refrigerated hash browns, thawed and dry)

2 cups thinly sliced green cabbage

1 cup shredded Irish cheddar cheese

1 large egg

2 tablespoons butter or olive oil (plus more if needed)

Salt and pepper to taste

2 tablespoons chopped green onions (for garnish)


Instructions

  1. Shred the potatoes and rinse under cold water. Pat them dry thoroughly.
  2. Heat 1 tablespoon of butter or oil in a skillet over medium heat. Add the cabbage and a pinch of salt; sauté for 5-7 minutes until tender.
  3. Push the cabbage to the edges of the skillet. Add remaining butter and spread potatoes in the center. Cook undisturbed for 5-7 minutes until golden.
  4. Mix the cabbage and potatoes gently, then flatten into an even layer. Sprinkle the cheese on top and let it melt.
  5. Make a well in the center and crack in the egg. Cover the skillet and cook 3-4 minutes until the egg white is set.
  6. Garnish with green onions, season with salt and pepper, and serve hot.
