Description

This healthy cottage cheese egg bake is a protein-packed easy recipe that makes mornings so much easier. It is fluffy, cheesy, and loaded with simple ingredients, making it perfect for a quick breakfast, healthy snack, breakfast ideas, meal prep, and even light dinner ideas when you want something wholesome and satisfying.

Ingredients

Scale

6 large eggs

1 cup cottage cheese

2 cups fresh spinach, chopped

3 green onions, sliced

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon olive oil or cooking spray

Instructions

1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish with olive oil or cooking spray.

2. In a large bowl, whisk together the eggs and cottage cheese until well combined.

3. Stir in the chopped spinach, sliced green onions, garlic powder, salt, and black pepper.

4. Fold in the mozzarella and Parmesan cheese until evenly mixed.

5. Pour the mixture into the prepared baking dish and spread it into an even layer.

6. Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.

7. Let the egg bake rest for 5 to 10 minutes before slicing and serving.

Notes

Squeeze out extra moisture if using frozen spinach so the bake stays firm.

Let the casserole rest before slicing so the pieces hold together better.

Store leftovers in the fridge for up to 4 days for an easy meal prep breakfast.
