Ingredients
1 cup unsalted butter, melted
1 1/2 cups granulated sugar
3 large eggs
2 teaspoons vanilla extract
3/4 cup unsweetened cocoa powder
3/4 cup all-purpose flour
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips
1/2 cup unsalted butter
3/4 cup brown sugar
3/4 cup evaporated milk
2 large egg yolks
1 teaspoon vanilla extract
1 1/4 cups sweetened shredded coconut
1 cup chopped pecans
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper. Lightly grease the pan.
2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy.
3. Add the eggs and vanilla extract, then whisk until fully combined.
4. Stir in the cocoa powder, flour, and salt just until no dry streaks remain.
5. Fold in the chocolate chips.
6. Spread the brownie batter evenly into the prepared pan.
7. Bake for 22 to 28 minutes, until the center is set and a toothpick comes out with a few moist crumbs.
8. While the brownies bake, add the butter, brown sugar, evaporated milk, and egg yolks to a saucepan over medium heat.
9. Stir constantly for 6 to 8 minutes, until the mixture thickens slightly.
10. Remove the saucepan from the heat and stir in the vanilla extract, shredded coconut, and chopped pecans.
11. Let the brownies cool for 10 to 15 minutes after baking.
12. Spoon the coconut pecan topping over the brownies and spread it evenly.
13. Cool completely before slicing into squares and serving.
Notes
Use room temperature eggs for a smoother brownie batter and a more even texture.
Do not overbake the brownie base or it will lose that soft, fudgy center.
Cool completely before slicing so the coconut pecan topping stays in place and the brownies cut cleanly.
