Ingredients
1 cup creamy peanut butter
2 large eggs
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
Instructions
1. Preheat the oven to 350°F and grease or line a 12-cup muffin pan.
2. In a large bowl, mix the peanut butter, eggs, brown sugar, vanilla extract, baking soda, and salt until smooth.
3. Fold in the chocolate chips, reserving a small amount for the tops if desired.
4. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
5. Sprinkle the remaining chocolate chips on top.
6. Bake for 15 to 18 minutes, until the tops are set and a toothpick inserted near the center comes out mostly clean.
7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use creamy peanut butter for the smoothest batter and best texture.
Do not overbake or the muffins can turn dry instead of soft and tender.
