Ingredients
8 slices white sandwich bread
1 large English cucumber, thinly sliced
8 ounces cream cheese, softened
2 tablespoons mayonnaise
1 tablespoon fresh dill, finely chopped
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
1. In a medium bowl, mix the softened cream cheese, mayonnaise, fresh dill, lemon juice, garlic powder, salt, and black pepper until smooth.
2. Wash and dry the cucumber, then slice it very thinly. Pat the slices dry with a paper towel if needed.
3. Spread the cream cheese mixture evenly over all 8 slices of bread.
4. Arrange the cucumber slices over 4 of the bread slices in an even layer.
5. Top with the remaining bread slices, spread side down, to make sandwiches.
6. Trim off the crusts if desired.
7. Cut each sandwich into triangles or fingers and serve immediately, or chill briefly before serving.
Notes
Patting the cucumber slices dry helps keep the sandwiches from getting soggy.
Softened cream cheese makes the spread much easier to mix and spread evenly.
These are best served the same day for the freshest texture and flavor.
