4 salmon fillets

1 tablespoon olive oil

2 tablespoons butter

4 cloves garlic, minced

5 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

1 tablespoon fresh dill, chopped

4 lemon slices


Instructions

1. Pat the salmon fillets dry and season them with salt, black pepper, and red pepper flakes.

2. Heat olive oil in a large skillet over medium-high heat.

3. Sear the salmon for 4 to 5 minutes on the first side until golden.

4. Flip and cook for 2 to 3 more minutes, then transfer the salmon to a plate.

5. Reduce the heat to medium and melt the butter in the same skillet.

6. Add the minced garlic and cook for 30 seconds until fragrant.

7. Add the spinach and stir until wilted.

8. Pour in the heavy cream and stir in the Parmesan cheese and lemon juice.

9. Simmer the sauce for 2 to 3 minutes until slightly thickened.

10. Return the salmon to the skillet and spoon the sauce over the top.

11. Let everything heat through for 2 minutes.

12. Garnish with fresh dill and lemon slices, then serve.


Notes

Use salmon fillets that are similar in size so they cook evenly.

Do not overcook the salmon because it will continue cooking slightly when returned to the sauce.

Fresh lemon juice gives the sauce the best bright flavor, so skip bottled juice if possible.
