Ingredients
1 medium head cauliflower, cut into small florets
2 tablespoons olive oil

1/2 teaspoon salt
1/4 teaspoon black pepper
8 small tortillas
1 large avocado, mashed or sliced
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
1/2 cup plain Greek yogurt or sour cream
2 tablespoons lime juice
1 teaspoon lime zest
2 tablespoons chopped cilantro for the crema
1 to 2 tablespoons water or milk
lime wedges, for serving
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Add the cauliflower florets to a large bowl. Toss with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper until well coated.
3. Spread the cauliflower in a single layer on the prepared baking sheet.
4. Roast for 25 to 30 minutes, flipping halfway through, until the cauliflower is tender and browned around the edges.
5. While the cauliflower roasts, make the crema by stirring together the Greek yogurt or sour cream, lime juice, lime zest, chopped cilantro, and water or milk until smooth.
6. Warm the tortillas in a skillet, microwave, or over a flame until soft and pliable.
7. Spread avocado onto each tortilla, then top with roasted cauliflower, diced red onion, and fresh cilantro.
8. Drizzle the cilantro lime crema over the tacos and serve with lime wedges.
Notes
Cut the cauliflower into evenly sized florets so everything roasts at the same rate.
Do not overcrowd the pan or the cauliflower may steam instead of brown.
Store the crema separately from the roasted cauliflower for the best leftover texture.
