Description

These Zucchini Cheese Bites are a quick breakfast, easy snack, and simple side dish all in one. Packed with fresh zucchini, melty cheddar, Parmesan, and savory herbs, this easy recipe is perfect for breakfast ideas, lunchbox food ideas, party appetizers, or a healthy snack when you want something warm, cheesy, and satisfying.


Ingredients

2 cups shredded zucchini, squeezed dry

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup breadcrumbs

2 green onions, thinly sliced

1 garlic clove, minced

2 tablespoons chopped fresh parsley

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or 1 teaspoon oil for greasing pan


Instructions

1. Preheat the oven to 375°F and grease a 12-cup muffin tin with cooking spray or oil.

2. Shred the zucchini and squeeze out as much moisture as possible using a clean kitchen towel.

3. In a large bowl, combine the zucchini, cheddar cheese, Parmesan cheese, eggs, breadcrumbs, green onions, garlic, parsley, salt, and black pepper.

4. Stir until the mixture is evenly combined.

5. Spoon the mixture into the prepared muffin tin, filling each cup nearly to the top.

6. Press the tops down lightly so the bites hold together while baking.

7. Bake for 20 to 24 minutes, or until the tops are set and the edges are golden brown.

8. Let the bites cool in the pan for 5 minutes before removing.

9. Serve warm or let cool and store for later.


Notes

Squeeze the zucchini very well so the bites do not turn watery.

Use a nonstick muffin tin or grease the pan generously for easier removal.

For extra flavor, add a pinch of Italian seasoning or a little crushed red pepper.
