Description

This stuffed meatloaf isn’t your average loaf. It takes a comfort classic and gives it a gooey, cheesy upgrade with a molten mozzarella center and a perfectly caramelized glaze. Juicy, flavorful, and showstoppingly satisfying, it’s ideal for family dinners or when you want comfort food that feels a little extra.


Ingredients

2 lbs ground beef (80/20)

1 cup breadcrumbs

2 eggs

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp Worcestershire sauce

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

8 oz mozzarella (cut into sticks or strips)

1/2 cup ketchup

2 tbsp brown sugar

1 tbsp Dijon mustard


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment or foil.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire, seasoning, salt, and pepper until combined.
  3. Shape half the mixture into a loaf base. Lay mozzarella in the center. Top with remaining meat and seal edges.
  4. Mix ketchup, brown sugar, and mustard. Spread over meatloaf.
  5. Bake for 45-55 minutes or until internal temp reaches 160°F.
  6. Let rest for 10 minutes before slicing to keep juices and cheese in place.
