This Stuffed Meatloaf with Mozzarella is a cheesy, hearty dinner perfect for family meals. With a tender ground beef mix, a melty mozzarella center, and a tangy glaze, it’s comfort food that looks as good as it tastes.
Ingredients
500g ground beef
1 cup breadcrumbs
2 eggs
1 small onion, finely diced
2 cloves garlic, minced
1/4 cup Parmesan cheese, grated
1 teaspoon Italian seasoning
200g mozzarella cheese, sliced or in a log
1/2 cup ketchup or BBQ sauce
2 tablespoons fresh parsley, chopped
Instructions
1. Combine ground beef, breadcrumbs, eggs, onion, garlic, Parmesan, Italian seasoning, salt, and pepper in a bowl.
2. On a lined baking sheet, shape half the meat mixture into a loaf base.
3. Lay mozzarella along the center, leaving edge space.
4. Cover with the remaining meat, sealing the edges.
5. Spread ketchup or BBQ sauce over the top.
6. Bake at 375°F (190°C) for 50-60 minutes or until internal temperature is 160°F (71°C).
7. In the last 10 minutes, sprinkle extra mozzarella on top.
8. Let rest for 10 minutes.
9. Garnish with fresh parsley before slicing.
Notes
Use low-moisture mozzarella for best melt without excess moisture.
Avoid overmixing the meat to keep the texture tender.
