This Spicy Chicken Sandwich with Creamy Homemade Sauce is everything a bold sandwich should be—crispy, juicy chicken packed with heat, cooled by a luscious, garlicky homemade sauce, and stacked between golden toasted buns. It’s the perfect balance of crunch, spice, and creaminess for lunch, dinner, or anytime you’re craving serious flavor.

2 large chicken breasts (boneless, skinless, sliced in half lengthwise)

1 cup buttermilk

2 tablespoons hot sauce

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1/2 teaspoon cayenne pepper

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 teaspoon salt

4 sesame seed buns

1/2 cup mayonnaise

1 tablespoon lemon juice or vinegar

1/2 teaspoon paprika (for sauce)

1/2 teaspoon garlic powder (for sauce)

12 dill pickle slices

1 cup leafy greens (optional)

Oil for frying (canola, peanut, or vegetable)


Instructions

1. In a medium bowl, whisk buttermilk with hot sauce. Add chicken and marinate for at least 1 hour or overnight.

2. In another bowl, mix flour, cornstarch, paprika, cayenne, garlic powder, salt, and black pepper.

3. In a small bowl, whisk together mayonnaise, lemon juice, paprika, and garlic powder. Chill sauce until ready to use.

4. Heat oil in a deep skillet to 350°F (175°C).

5. Dredge each piece of marinated chicken in the flour mixture. Press to coat thoroughly.

6. Fry chicken 4–6 minutes per side until golden brown and internal temp reaches 165°F. Transfer to a wire rack.

7. Toast buns until golden.

8. Spread sauce on the bottom bun, layer with pickles, chicken, optional greens, and more sauce. Top with bun and serve.


Notes

Marinating the chicken longer enhances flavor and tenderness—overnight is ideal.

For extra crunch, double-dip the chicken in the flour mix after marinating.

Toasting the bun is essential for texture and prevents it from getting soggy.
