Ingredients
1 3/4 cups almond flour
1 3/4 cups powdered sugar
3 large egg whites, room temperature
1/4 cup granulated sugar
1 teaspoon vanilla extract
blue gel food coloring, as needed
1/2 cup unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1/2 teaspoon vanilla extract
white fondant snowflakes or royal icing snowflakes, as needed
edible glitter or sanding sugar, as needed
gold sprinkles, as needed
Instructions
1. Line two baking sheets with parchment paper or silicone macaron mats.
2. Sift the almond flour and powdered sugar together into a large bowl.
3. In a clean mixing bowl, beat the egg whites until foamy.
4. Gradually add the granulated sugar and beat until stiff glossy peaks form.
5. Mix in 1 teaspoon vanilla extract and enough blue gel food coloring to create an icy blue shade.
6. Fold the dry ingredients into the meringue in batches until the batter flows slowly like lava.
7. Transfer the batter to a piping bag and pipe even rounds onto the prepared baking sheets.
8. Tap the trays firmly on the counter and pop any air bubbles with a toothpick.
9. Let the shells rest for 30 to 45 minutes, or until the tops feel dry.
10. Bake at 300°F for 14 to 16 minutes, then cool completely.
11. Beat the butter and cream cheese until smooth.
12. Add 2 cups powdered sugar and 1/2 teaspoon vanilla extract, then beat until fluffy.
13. Match the macaron shells by size and pipe filling onto half of them.
14. Sandwich with the remaining shells.
15. Decorate with snowflakes, edible glitter, and gold sprinkles.
16. Chill for 24 hours for the best texture, then serve.
Notes
Make sure your mixing bowl is completely clean and dry before whipping the egg whites.
Do not skip resting the shells, because that helps create smooth tops and proper macaron feet.
Let the filled macarons mature in the fridge before serving for the best chewy texture.
