lbs boneless, skinless chicken breasts (cut into bite-sized cubes)

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

½ teaspoon garlic powder

1 cup barbecue sauce (preferably chipotle flavored)

1 tablespoon adobo sauce (from a can of chipotle peppers)

3 cups cooked brown rice (or white rice if preferred)

1 tablespoon lime juice (optional, for brightness)

Fresh cilantro for garnish (optional)


Instructions

  1. Season chicken with salt, pepper, smoked paprika, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken and sear for 6–8 minutes until golden and cooked through.
  3. Reduce heat to medium-low. Pour in barbecue sauce and adobo sauce. Stir to coat the chicken and simmer for 2–3 minutes.
  4. If needed, warm the cooked rice separately or stir into the skillet for 1–2 minutes.
  5. Spread rice in the skillet and top with the chipotle BBQ chicken mixture.
  6. Optional: Drizzle with lime juice and garnish with chopped cilantro.
  7. Serve hot.
