Description

This Sheet Pan Honey Dijon Chicken with Veggies is a quick dinner packed with juicy chicken, roasted Brussels sprouts, and tender butternut squash in a sweet and tangy honey Dijon glaze. 2 large chicken breasts

3 cups Brussels sprouts, trimmed and halved

3 cups butternut squash, peeled and cubed

3 tablespoons Dijon mustard

2 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves


Instructions

1. Preheat the oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.

2. In a small bowl, whisk together the Dijon mustard, honey, olive oil, garlic, lemon juice, salt, black pepper, and thyme.

3. Arrange the Brussels sprouts and butternut squash on the sheet pan.

4. Place the chicken breasts on the pan and brush them with part of the honey Dijon mixture.

5. Toss the vegetables with the remaining sauce until evenly coated.

6. Roast for 25 to 30 minutes, or until the chicken reaches 165°F internally and the vegetables are tender and caramelized.

7. Rest for 5 minutes, then spoon the pan juices over the chicken and serve warm.


Notes

Cut the butternut squash into even cubes so it roasts at the same rate as the Brussels sprouts.

If your chicken breasts are very thick, pound them slightly for more even cooking.

For extra color and caramelization, broil the pan for 1 to 2 minutes at the end.
