1 medium spaghetti squash

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 pound ground chicken

3 cloves garlic, minced

1 teaspoon Italian seasoning

2 cups fresh spinach

1 cup cherry tomatoes, halved

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons fresh basil, chopped


Instructions

1. Preheat the oven to 400°F.

2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.

3. Brush the cut sides with olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

4. Place the squash halves cut side down on a baking sheet and roast for 35 to 45 minutes, until tender.

5. While the squash roasts, cook the ground chicken in a skillet over medium heat until browned.

6. Add the garlic, Italian seasoning, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper.

7. Stir in the spinach and cherry tomatoes and cook for 2 to 3 minutes, until the spinach wilts.

8. Remove the squash from the oven and let it cool slightly.

9. Use a fork to scrape the inside into strands while keeping the shells intact.

10. Spoon the chicken mixture into the squash halves and gently combine with some of the squash strands.

11. Top with mozzarella cheese and Parmesan cheese.

12. Return to the oven and bake for 10 to 12 minutes, until the cheese is melted and bubbly.

13. Garnish with fresh basil and serve warm.


Notes

Use a sharp knife and steady pressure when cutting the squash, since spaghetti squash can be tough before roasting.

Do not overcook the spinach and tomatoes in the skillet or the filling can become too wet.

For extra golden cheese on top, broil the stuffed squash for 1 to 2 minutes at the end.
