Ingredients
2 ripe Bosc or Anjou pears
2 ounces goat cheese
1/4 cup chopped walnuts
2 tablespoons maple syrup
1 tablespoon olive oil
1 teaspoon fresh rosemary, chopped
1/8 teaspoon salt
1/8 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F.
2. Wash the pears, slice them in half lengthwise, and scoop out the seeds.
3. Trim a tiny slice from the back of each pear half if needed so they sit flat.
4. Place the pears cut side up on a parchment-lined baking sheet.
5. Brush the cut sides lightly with olive oil.
6. Sprinkle with salt and black pepper.
7. Roast for 20 to 25 minutes, until tender and lightly golden.
8. Remove from the oven and add goat cheese to the centers of the warm pears.
9. Top with chopped walnuts and chopped rosemary.
10. Drizzle maple syrup over each pear half.
11. Serve warm.
Notes
Use pears that are ripe but still firm so they hold their shape while roasting.
Add the goat cheese after roasting so it softens without fully melting away.
Toast the walnuts for a few minutes before topping if you want even deeper flavor.
