Ingredients
2 1/4 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 tablespoon vanilla extract
1 tablespoon red food coloring
1 cup white chocolate chips
Instructions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
4. Add the egg, vanilla extract, and red food coloring, then mix until smooth and evenly combined.
5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Fold in the white chocolate chips.
7. Scoop the dough onto the prepared baking sheet, spacing the cookies a few inches apart.
8. Bake for 10 to 12 minutes, until the edges are set and the centers still look slightly soft.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overbake these cookies or they will lose their soft, chewy texture.
For a stronger red color, use gel food coloring instead of standard liquid food coloring.
Press a few extra white chocolate chips on top of the dough balls before baking for a prettier bakery-style finish.
