8 ounces cream cheese, softened
1/3 cup powdered sugar
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper or grease it lightly.
2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy.
3. Add the eggs and vanilla extract, then whisk until fully combined.
4. Stir in the red food coloring until the batter is evenly colored.
5. Mix in the cocoa powder until smooth.
6. Fold in the flour and salt just until combined. Do not overmix.
7. In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth.
8. Spread most of the brownie batter into the prepared pan, saving a few spoonfuls for the top.
9. Spoon the cream cheese mixture over the batter.
10. Drop the remaining brownie batter over the cream cheese layer and gently swirl with a knife.
11. Bake for 28 to 34 minutes, until the center is set and a toothpick comes out with a few moist crumbs.

Notes
For the cleanest slices, chill the brownies for 30 to 60 minutes before cutting.
Do not overbake, or the brownies will lose their soft and fudgy texture.
Use gel or liquid red food coloring, but add it gradually if you want to control the depth of color.
