Ingredients
3 cups pears, peeled and sliced
2 cups fresh or frozen cranberries
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
3/4 cup old-fashioned oats
3/4 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup unsalted butter, melted
Instructions
1. Preheat the oven to 350°F and lightly grease an 8×8-inch baking dish.
2. In a large bowl, combine the sliced pears, cranberries, granulated sugar, lemon juice, vanilla extract, flour, cinnamon, nutmeg, and salt. Toss until evenly coated.
3. Transfer the fruit mixture to the prepared baking dish and spread it into an even layer.
4. In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and salt for the topping.
5. Pour in the melted butter and stir until crumbly clusters form.
6. Sprinkle the topping evenly over the fruit mixture.
7. Bake for 40 to 50 minutes, until the filling is bubbling and the topping is golden brown.
8. Let the crisp rest for 10 to 15 minutes before serving.
Notes
Use firm pears like Bosc or Anjou so they hold their shape while baking.
If using frozen cranberries, add them directly from the freezer without thawing.
For the best texture, let the crisp cool slightly before serving so the filling can thicken.
