Ingredients
4 bone-in, skin-on chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
3/4 cup chicken broth
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1 lemon, sliced
1 tablespoon chopped fresh parsley
1 teaspoon fresh rosemary or thyme
Instructions
1. Pat the chicken thighs dry with paper towels, then season both sides with salt, black pepper, garlic powder, and paprika.
2. Heat the olive oil in a large skillet over medium to medium-high heat.
3. Add the chicken thighs and sear for 5 to 6 minutes per side until deeply golden brown.
4. Remove the chicken from the skillet and set aside.
5. Lower the heat to medium and add the butter to the same skillet.
6. Stir in the minced garlic and cook for 30 seconds until fragrant.
7. Pour in the chicken broth, then whisk in the Dijon mustard and fresh lemon juice until smooth.
