Description

These chewy, buttery Oatmeal Chocolate Chip Cookies are loaded with old-fashioned oats and rich chocolate chunks. With crisp edges and soft, gooey centers, they make the perfect anytime treat.


Ingredients

1 cup (2 sticks) unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon ground cinnamon (optional)

1/2 teaspoon salt

3 cups old-fashioned rolled oats

1 1/2 cups chocolate chunks or chips


Instructions

  1. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each. Stir in vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon (if using), and salt.
  4. Gradually add the dry ingredients to the wet mixture. Stir just until combined.
  5. Fold in the oats and chocolate chunks until evenly distributed.
  6. Chill the dough for 30 minutes.
  7. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  8. Scoop 2-tablespoon portions of dough and place on the sheet, spacing them apart.
  9. Bake for 10-12 minutes until edges are golden and centers are set.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
