Packed with seasoned ground beef, fluffy rice, roasted sweet potatoes, creamy cottage cheese, and fresh avocado, this easy recipe delivers bold flavor, satisfying texture, and plenty of protein in every bite.


Ingredients

1 pound ground beef

2 cups sweet potatoes, peeled and diced

2 cups cooked white rice

1 cup cottage cheese

1 avocado, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley


Instructions

1. Preheat the oven to 425°F.

2. Toss the diced sweet potatoes with olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon salt, and black pepper.

3. Spread the sweet potatoes on a baking sheet and roast for 22 to 25 minutes, stirring once, until tender and lightly browned.

4. While the sweet potatoes roast, heat a skillet over medium heat and add the ground beef.

5. Cook the beef until browned, breaking it apart as it cooks, then drain any excess grease.

6. Stir in the remaining garlic powder, remaining smoked paprika, chili powder, onion powder, and remaining salt.

7. Cook the beef for 2 more minutes so the seasonings coat the meat well.

8. Divide the warm cooked rice between 4 bowls.

9. Top each bowl with seasoned ground beef, roasted sweet potatoes, cottage cheese, and diced avocado.

10. Finish with chopped parsley and serve immediately.


Notes

Roast the sweet potatoes in a single layer so they caramelize instead of steaming.

Add the cottage cheese at the end so it stays cool and creamy against the warm beef and rice.

For meal prep, store the avocado separately and add it just before serving for the best texture.
