2 tablespoons olive oil

1 small yellow onion, diced

4 cloves garlic, minced

1/2 cup chopped sun-dried tomatoes

1 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes

6 cups chicken broth

1 cup heavy cream

3 cups cooked shredded chicken

1 cup grated parmesan cheese

2 cups small pasta or cheese tortellini

2 cups fresh spinach

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh basil or parsley

4 slices bacon, cooked and crumbled


Instructions

1. Heat the olive oil in a large soup pot over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.

2. Stir in the garlic, sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes. Cook for 1 minute until fragrant.

3. Pour in the chicken broth and bring the soup to a gentle simmer.

4. Add the pasta or tortellini and cook until tender according to the package directions.

5. Reduce the heat to low and stir in the heavy cream, shredded chicken, and parmesan cheese until the broth is creamy and smooth.

6. Add the spinach, salt, and black pepper. Stir until the spinach wilts.

7. Ladle into bowls and top with fresh basil or parsley and crumbled bacon before serving.


Notes

Use rotisserie chicken for an even faster weeknight version.

Add the parmesan over low heat so it melts smoothly into the broth.

If making ahead, cook the pasta separately and stir it in before serving so it does not soak up too much liquid.
