1 small yellow onion, diced

3 cloves garlic, minced

16 ounces cremini mushrooms, sliced

3 cups cooked brown or green lentils

1 1/2 cups vegetable broth

1 tablespoon Dijon mustard

1 tablespoon soy sauce

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup sour cream or plain Greek yogurt

2 tablespoons chopped fresh parsley or chives

Mashed potatoes, egg noodles, or rice, for serving


Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.

2. Stir in the minced garlic and cook for 30 seconds until fragrant.

3. Add the sliced mushrooms and cook for 8 to 10 minutes, stirring occasionally, until they release their moisture and turn golden brown.

4. Stir in the Dijon mustard, soy sauce, paprika, salt, and black pepper.

5. Pour in the vegetable broth and scrape the bottom of the skillet to lift any flavorful bits.

6. Add the cooked lentils and simmer for 5 to 7 minutes until the mixture thickens slightly.

7. Reduce the heat to low and stir in the sour cream or Greek yogurt until the sauce is creamy and smooth.

8. Taste and adjust seasoning if needed.

9. Serve hot over mashed potatoes, egg noodles, or rice.

10. Top with chopped parsley or chives before serving.


Notes
