Ingredients
1.5 pounds chicken thighs or breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
3 tablespoons butter
4 cloves garlic, minced
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1/2 teaspoon crushed red pepper flakes (optional)
1/2 cup chicken broth
2 tablespoons chopped parsley
Instructions
1. Season both sides of the chicken with salt and pepper.
2. Heat olive oil in a large skillet over medium heat. Sear the chicken for 5–6 minutes per side until golden brown and fully cooked through. Remove and set aside.
3. Reduce heat and melt butter in the same skillet. Add minced garlic and cook for 30 seconds until fragrant.
4. Stir in lemon zest, lemon juice, and red pepper flakes. Let simmer for 1–2 minutes.
5. Add chicken broth, scraping up browned bits. Simmer the sauce for 3–4 minutes to slightly reduce and thicken.
6. Return the chicken to the skillet and spoon the sauce over the top. Cook for an additional 2–3 minutes.
7. Garnish with fresh parsley. Serve hot with your favorite side dishes.
Notes
For even cooking, pound chicken breasts to an even thickness before searing.
If the sauce reduces too much, add a splash of extra chicken broth to thin it out.
Fresh lemon juice is essential—avoid bottled lemon juice for best flavor.
