Ingredients
1 cup peanut butter
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until fluffy.
3. Add in the egg and vanilla extract, mixing until smooth.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add dry ingredients to the wet mixture and stir until just combined.
6. Roll dough into tablespoon-sized balls and place them on the baking sheet about 2 inches apart.
7. Flatten each dough ball with a fork in a crisscross pattern.
8. Bake for 9–11 minutes until the edges are set. Centers will still appear soft.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chill the dough for 30 minutes if baking in a warm kitchen to reduce spread.
Natural peanut butter works but must be stirred well before measuring.
