This Irresistible French Onion Meatloaf brings the rich, savory depth of French onion soup into a cheesy, juicy meatloaf format. Caramelized onions, melty Gruyère cheese, and a golden baked finish make this comfort dish perfect for weeknights or cozy gatherings.
Ingredients
1.5 pounds ground beef (80/20 blend)
2 large yellow onions, thinly sliced
1 cup Gruyère or Swiss cheese, shredded
3/4 cup breadcrumbs
2 large eggs
1/4 cup beef broth
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1 teaspoon thyme (fresh or dried)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup crispy fried onions (optional topping)
Instructions
1. Heat butter in a skillet over medium-low. Add sliced onions and cook for 25–30 minutes until golden and jammy. Deglaze with beef broth.
2. In a bowl, mix ground beef, half the caramelized onions, breadcrumbs, eggs, Worcestershire sauce, garlic, thyme, salt, and pepper until just combined.
3. Place half the meat mixture into a loaf pan. Create a trench and fill with shredded cheese. Cover with remaining meat and seal.
4. Bake at 375°F (190°C) for 45–50 minutes. In the last 10 minutes, top with remaining onions, cheese, and crispy fried onions if desired.
5. Let rest for 10 minutes before slicing and serving.
Notes
Don’t rush caramelizing the onions—low and slow is key to maximum flavor.
Use freshly shredded cheese for best melt and taste.
Letting the meatloaf rest prevents it from falling apart when sliced.
