Description

This Hobo Casserole Ground Beef is the ultimate comfort meal, layering thinly sliced potatoes, savory ground beef, creamy mushroom sauce, and melty cheese. Perfect for busy weeknights or feeding a hungry crowd, it’s a nostalgic classic made simple and delicious.


Ingredients

1 lb ground beef

4 medium russet potatoes, thinly sliced

1 medium onion, diced

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

2 cups shredded cheddar or Colby Jack cheese

1 teaspoon salt 1/2 teaspoon black pepper

1/2 teaspoon garlic powder (optional)


Instructions

1. Preheat the oven to 375°F (190°C).

Peel and thinly slice the potatoes; dice the onion; shred the cheese if needed.

Brown the ground beef in a skillet over medium heat, seasoning with salt, pepper, and garlic powder.

Drain excess grease. In a bowl, mix the cream of mushroom soup and milk until smooth.

Grease a baking dish.

Layer half the potatoes, half the onions, half the beef, and half the soup mixture.

Repeat layers and top with cheese.

Cover with foil and bake for 45 minutes.

Remove foil and bake 15-20 minutes more, until potatoes are fork-tender and cheese is bubbly.

Let rest 5-10 minutes before serving.


Notes

Slice the potatoes thin (about 1/8 inch) for even cooking.

You can assemble it ahead and refrigerate up to 24 hours before baking.

For extra cheesy goodness, mix some cheese into the beef or potato layers.
