Ingredients
2 steaks (ribeye or sirloin)
1 tablespoon olive oil (for steak)
1 pint cherry tomatoes
1 tablespoon olive oil (for tomatoes)
1 cup mozzarella pearls
1 cup fresh basil leaves, torn or sliced
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons balsamic glaze
Instructions
1. Pat the steaks dry, rub with olive oil, and season with salt and pepper. Let them rest at room temp.
2. Preheat grill or grill pan to medium-high. Grill the steaks 4–5 minutes per side. Rest 10 minutes before slicing.
3. In a skillet over medium heat, add olive oil and cherry tomatoes. Cook 5–6 minutes until blistered and soft.
4. Slice steak thinly and arrange on a platter. Top with blistered tomatoes, mozzarella pearls, and fresh basil.
5. Drizzle with balsamic glaze and finish with extra salt and pepper to taste. Serve warm.
Notes
Let the steak rest before slicing to keep juices locked in.
Use a meat thermometer for perfect doneness (130°F = medium-rare).
Burrata makes a great creamy substitute for mozzarella pearls.
