Ingredients
6 large yellow onions
1 tablespoon olive oil
1 pound ground lamb or ground beef
3 cloves garlic, minced
1 cup cooked white rice
2 tablespoons tomato paste
1 cup diced tomatoes
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup crumbled feta cheese
1/2 cup chicken broth
Instructions
1. Preheat the oven to 375°F.
2. Peel the onions and trim the ends so they can stand upright.
3. Bring a large pot of water to a gentle boil and cook the onions for 10 to 12 minutes until slightly softened.
4. Remove the onions and let them cool enough to handle.
5. Carefully separate the inner layers from each onion, leaving 2 to 3 outer layers intact to form shells.
6. Chop the removed onion centers.
7. Heat olive oil in a skillet over medium heat and cook the chopped onion centers for 4 to 5 minutes until softened.
8. Add the ground lamb or beef and cook until browned.
9. Stir in the garlic and cook for 30 seconds.
10. Add the cooked rice, tomato paste, diced tomatoes, parsley, oregano, cinnamon, salt, and black pepper.
11. Cook for 2 to 3 minutes until the filling is well combined.
12. Arrange the onion shells in a baking dish.
13. Fill each onion shell with the meat mixture.
14. Top each stuffed onion with crumbled feta cheese.
15. Pour the chicken broth into the bottom of the baking dish.
16. Cover with foil and bake for 30 minutes.
17. Uncover and bake for 10 more minutes until the onions are tender and lightly golden.
18. Garnish with extra parsley and serve warm.
Notes
Do not overboil the onions or they may tear when you separate the layers.
Use lamb for a deeper traditional Greek flavor, or beef for a milder and more familiar version.
Spoon a little of the pan liquid over the onions before serving to keep them extra moist and flavorful.
