1 small onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

8 ounces mushrooms, sliced

3 tablespoons all-purpose flour

2 cups chicken broth

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

2 cups cooked chicken, shredded or diced

16 ounces potato gnocchi

1 cup peas

1 tablespoon chopped parsley


Instructions

1. Melt the butter in a large skillet or Dutch oven over medium heat. Add the onion, carrots, and mushrooms, then cook for 5 to 6 minutes until softened.

2. Stir in the garlic and cook for 30 seconds until fragrant.

3. Sprinkle the flour over the vegetables and stir well to coat everything evenly.

4. Slowly pour in the chicken broth while stirring, then add the heavy cream, thyme, salt, and black pepper.

5. Bring the sauce to a gentle simmer and cook for 3 to 4 minutes until it starts to thicken.

6. Stir in the cooked chicken and gnocchi, then simmer for 4 to 5 minutes until the gnocchi are tender and the sauce is creamy.

7. Add the peas and cook for 1 to 2 minutes until heated through.

Notes

Rotisserie chicken works perfectly in this recipe and saves time on busy nights.

If the sauce gets too thick, stir in a splash of chicken broth or cream before serving.
