Description

2 everything bagels, halved

4 large eggs

2 tablespoons heavy cream

1/2 cup shredded cheddar cheese

4 strips bacon, cooked and crumbled

4 tablespoons cream cheese, softened

2 tablespoons sliced green onions

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon everything bagel seasoning

butter or cooking spray, for greasing


Instructions

1. Preheat the oven to 375°F and lightly grease a baking sheet or small baking dish.

2. Slice the bagels in half and scoop out a little of the center from each half to make room for the filling.

3. Spread 1 tablespoon of cream cheese inside each bagel half.

4. In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until smooth.

5. Stir in the shredded cheddar cheese, crumbled bacon, and green onions.

6. Place the bagel halves on the prepared baking sheet and spoon the egg mixture evenly into each one.

7. Sprinkle everything bagel seasoning over the tops.

8. Bake for 16 to 20 minutes, or until the egg filling is set and the tops are lightly golden.

9. Let cool for 3 to 5 minutes before serving warm.


Notes

Use sturdy bagels so they hold the filling without getting soggy.

Do not overfill the bagel halves or the egg mixture may spill over while baking.
