These Easy Date Snickers are a quick no bake dessert made with Medjool dates, creamy peanut butter, roasted peanuts, melted chocolate, and flaky sea salt for the perfect sweet and salty bite. Ingredients
12 Medjool dates, pitted
6 tablespoons creamy peanut butter
1/2 cup roasted peanuts
1 1/2 cups dark chocolate chips
1 tablespoon coconut oil
1/2 teaspoon flaky sea salt
Instructions
1. Line a small tray or plate with parchment paper.
2. Slice each date lengthwise and remove the pit if needed.
3. Open each date slightly and fill with about 1 1/2 teaspoons of peanut butter.
4. Press 2 to 3 roasted peanuts into the peanut butter filling of each date.
5. Place the stuffed dates in the freezer for 10 to 15 minutes.
6. Add the chocolate chips and coconut oil to a microwave-safe bowl.
7. Microwave in 20-second intervals, stirring between each interval, until smooth.
8. Dip each chilled stuffed date into the melted chocolate and coat well.
9. Place each coated date back on the parchment-lined tray.
10. Sprinkle flaky sea salt on top while the chocolate is still wet.
11. Refrigerate for 15 to 20 minutes, or until the chocolate is fully set.
12. Serve chilled or let sit for a few minutes before serving.
Notes
Use soft Medjool dates for the best chewy caramel-like texture.
Chill the stuffed dates before dipping so the chocolate coating goes on more easily.
Finish with flaky sea salt right away so it sticks before the chocolate sets.
