Ingredients
1 cup diced apples (Granny Smith or Honeycrisp)
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup thick caramel sauce, for drizzling
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Peel, core, and dice apples into small chunks. Pat dry with a paper towel to remove excess moisture.
3. In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
4. Add egg and vanilla extract; mix until fully combined.
5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
6. Gradually add the dry mixture into the wet mixture, stirring to form a dough.
7. Gently fold in the diced apples with a spatula.
8. Scoop dough onto the prepared baking sheet, spacing evenly.
9. Bake for 10–12 minutes, or until edges are golden brown.
10. Allow cookies to cool on the sheet for 5 minutes, then transfer to a wire rack.
11. Once cool, drizzle with thick caramel sauce. Let set or enjoy warm and sticky.
Notes
Be sure to dice apples small so they bake evenly and don’t release too much moisture.
Use a thick caramel sauce that won’t melt off the cookie after drizzling.
Chill the dough for 15–20 minutes if it feels too soft before baking.
