Ingredients
1 can (15 oz) black beans, rinsed and drained
2 large eggs
1/3 cup maple syrup or honey
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 pinch salt
1/3 cup chocolate chips (plus more for topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease an 8×8-inch pan or line it with parchment paper.
2. In a food processor, combine black beans, eggs, maple syrup or honey, melted coconut oil, and vanilla. Blend until smooth.
3. Add cocoa powder, baking powder, and salt. Blend again until fully incorporated.
4. Pour batter into a bowl and fold in chocolate chips.
5. Transfer batter to the prepared pan. Smooth the top and sprinkle extra chocolate chips.
6. Bake for 20–25 minutes or until center is set.
7. Let cool in the pan for 15 minutes before slicing. Chill for cleaner cuts if desired.
Notes
Use a high-powered food processor or blender to ensure the beans are fully pureed.
For vegan option, substitute eggs with flax eggs (1 tbsp ground flax + 2.5 tbsp water per egg).
Brownies are best chilled before slicing for a cleaner, fudgy finish.
