2 cups old-fashioned oats

4 cups chopped fresh rhubarb
1 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 tablespoon lemon juice
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper or grease it lightly.
2. In a large bowl, mix the old-fashioned oats, all-purpose flour, brown sugar, baking soda, salt, and ground cinnamon.

4. Press two-thirds of the oat mixture firmly into the bottom of the prepared pan.

7. Sprinkle the remaining oat mixture over the top of the rhubarb layer.
8. Bake for 40 to 45 minutes, until the top is golden and the filling is bubbling.
