Ingredients
2 pounds boneless skinless chicken thighs
1/2 cup honey
4 cloves garlic, minced
1/2 cup low sodium soy sauce
1/4 cup ketchup
2 tablespoons rice vinegar
1 teaspoon sesame oil
2 tablespoons cornstarch
2 tablespoons water
2 cups cooked white rice
2 tablespoons sliced green onions
1 tablespoon sesame seeds
Instructions
1. In a medium bowl, whisk together the honey, minced garlic, soy sauce, ketchup, rice vinegar, and sesame oil until smooth.
2. Place the chicken thighs in the crockpot and pour the sauce over the top, coating the chicken well.
3. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is tender and fully cooked.
4. In a small bowl, stir together the cornstarch and water to make a slurry. Mix it into the sauce in the crockpot.
5. Cover and cook for 15 to 20 more minutes, until the sauce thickens.
6. Shred or slice the chicken, then toss it back into the sauce.

Notes
Chicken thighs stay more tender than chicken breasts in the crockpot.
For a thicker sauce, let the cornstarch slurry cook a full 20 minutes before serving.
