2 boneless skinless chicken breasts

1 can cream of chicken soup

2 cups chicken broth

1 cup frozen peas and carrots

1/2 cup diced onion

2 cloves garlic, minced

2 tablespoons butter

1 teaspoon dried parsley

1/2 teaspoon black pepper

1 can refrigerated biscuit dough


Instructions

1. Place the chicken breasts in the bottom of the crockpot.

2. Add the cream of chicken soup, chicken broth, diced onion, minced garlic, butter, dried parsley, and black pepper.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked.

4. Remove the chicken, shred it with two forks, and return it to the crockpot.

5. Stir in the frozen peas and carrots.

6. Cut the biscuit dough into small pieces and place them evenly over the top of the mixture.

7. Cover and cook on high for 1 to 1 1/2 hours more, until the dumplings are fluffy and cooked through.

8. Gently stir, serve hot, and enjoy.


Notes

Use low-sodium chicken broth if you want better control over the salt level.

Keep the lid closed while the dumplings cook so they steam properly and stay fluffy.

For a thicker consistency, reduce the broth slightly or stir in a little cornstarch slurry at the end.
