Ingredients
4 salmon fillets
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
3 tablespoons melted butter
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
2 tablespoons chopped parsley
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Lemon wedges for serving
Instructions
1. Preheat the oven to 400°F and line a baking sheet or baking dish with parchment paper.
2. Pat the salmon fillets dry and place them skin-side down on the prepared pan.
3. Drizzle the salmon with olive oil and season lightly with salt, black pepper, and lemon juice.
4. In a small bowl, combine Parmesan cheese, panko breadcrumbs, melted butter, garlic, lemon zest, parsley, and Italian seasoning.
5. Press the Parmesan mixture evenly over the top of each salmon fillet.
6. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork and the topping is golden.
7. Broil for 1 to 2 minutes if you want the crust even crispier.
8. Remove from the oven, garnish with extra parsley, and serve with lemon wedges.
Notes
Pat the salmon dry before adding the topping so the crust stays crisp.
Freshly grated Parmesan gives the best flavor and browning.
Watch closely if broiling because the topping can brown quickly.
