Ingredients
4 oz cream cheese, softened
2 tbsp powdered keto sweetener
1/2 tsp vanilla extract
1 tsp lemon zest
1/2 cup fresh blueberries
4 low carb tortillas
2 tbsp melted butter
1/4 tsp ground cinnamon
1 tbsp powdered keto sweetener, for dusting
Instructions
1. In a medium bowl, beat the softened cream cheese, 2 tablespoons powdered keto sweetener, vanilla extract, and lemon zest until smooth and fluffy.
2. Gently fold in the fresh blueberries, being careful not to crush them too much.
3. Lay the low carb tortillas flat and divide the filling among them, spreading it along one side of each tortilla while leaving a small border around the edges.
4. Roll each tortilla up tightly into a log and place seam side down on a parchment-lined baking sheet or air fryer tray.
5. Brush the outside of each roll-up with melted butter and sprinkle lightly with ground cinnamon.
6. Bake at 375°F for 10 to 14 minutes until golden and crisp, or air fry at 350°F for 7 to 9 minutes until crisp.
7. Let them cool for 5 minutes, then dust with the remaining powdered keto sweetener before serving.
Notes
Use softened cream cheese so the filling stays smooth and spreads easily.
Do not overfill the tortillas or the filling may leak during baking.
For the crispiest texture, reheat leftovers in the oven or air fryer instead of the microwave.
