2 large chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

2 tablespoons olive oil

2 tablespoons butter

1 small yellow onion, diced

3 cloves garlic, minced

1 1/2 cups chicken broth

1 cup heavy cream

1 can cream of chicken soup

1/2 cup grated Parmesan cheese

3 cups cooked white rice

2 tablespoons fresh parsley, chopped


Instructions

1. Pat the chicken breasts dry and season both sides with salt, black pepper, garlic powder, onion powder, and paprika.

2. Heat olive oil in a large skillet over medium heat and sear the chicken for 4 to 5 minutes per side until golden brown. Remove from the skillet and set aside.

3. Add butter to the same skillet, then cook the diced onion for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds.

4. Pour in the chicken broth and scrape up the browned bits from the bottom of the pan.

5. Stir in the heavy cream, cream of chicken soup, and Parmesan cheese until the sauce is smooth and creamy.

6. Return the chicken to the skillet, spoon sauce over the top, cover, and simmer for 10 to 15 minutes until the chicken is cooked through.

7. Place cooked white rice onto plates or into bowls. Top with the smothered chicken and spoon the creamy sauce over everything.

8. Finish with chopped fresh parsley and serve hot.


Notes

For even more flavor, let the chicken sit with the seasoning for 10 minutes before searing.
