Description

Cowboy Butter Chicken Skewers are smoky, juicy bites marinated in a bold, herby cowboy butter sauce. Perfect for grilling season or an easy dinner, these skewers deliver savory garlic, lemon, mustard, and parsley flavors with a kick of spice. Serve them with your favorite sides for a complete meal that’s bound to impress.

680g (1.5 lb) boneless, skinless chicken thighs or breasts

113g (1/2 cup) unsalted butter

4 cloves garlic, minced

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes

2 tablespoons chopped fresh parsley

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a small saucepan over low heat, melt the unsalted butter. Stir in garlic, lemon juice, Dijon mustard, smoked paprika, red pepper flakes, parsley, salt, and pepper. Let simmer for 1–2 minutes, then remove from heat.

2. Place the chicken chunks in a bowl or zip-top bag. Pour in two-thirds of the cowboy butter and toss to coat. Cover and refrigerate for 30 minutes to 2 hours.

3. Soak wooden skewers in water for 30 minutes. Thread chicken onto skewers, leaving space between pieces.

4. Heat grill or grill pan to medium-high. Grill skewers 4–5 minutes per side until cooked through and slightly charred. Baste with remaining cowboy butter as they cook.

5. Serve hot, brushed with extra cowboy butter and garnished with more parsley if desired.


Notes

For best results, use chicken thighs—they’re more forgiving on the grill and stay juicy.

Don’t skip soaking the wooden skewers; it prevents burning.

Use any leftover cowboy butter as a dip for bread or drizzle over veggies.
