Ingredients
1 cup cottage cheese
1 medium apple, diced (Honeycrisp or Granny Smith recommended)
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 large eggs
2 to 3 tablespoons flour or almond flour
1 cup shredded coconut
1 to 2 tablespoons maple syrup or honey (optional)
1 pinch salt
Instructions
1. Dice the apples into small cubes and gently pat dry with a paper towel. Preheat oven to 375°F or preheat air fryer to 350°F.
2. In a large bowl, combine the cottage cheese, diced apples, cinnamon, vanilla, eggs, and optional sweetener. Mix until smooth.
3. If the mixture is too wet to scoop, stir in flour one tablespoon at a time until thickened.
4. Scoop the mixture into small balls using a spoon or cookie scoop.
5. Roll each ball in shredded coconut to coat fully.
6. Place on a parchment-lined baking sheet or into the air fryer basket.
7. Bake for 15–18 minutes or air fry for 10–12 minutes until golden brown.
8. Let cool slightly before serving. Enjoy warm or chilled.
