Christmas Haystack Cookies are a quick holiday dessert that brings big festive charm with very little effort. These no-bake cookies are made with crunchy chow mein noodles, creamy peanut butter, sweet butterscotch, and cheerful red and green candies for an easy recipe that is perfect for Christmas parties, cookie trays, homemade gifts, and fun food ideas all season long.
Ingredients
1 cup butterscotch chips
3/4 cup creamy peanut butter
4 cups chow mein noodles
1 cup mini marshmallows
24 red and green candy-coated chocolates
2 tablespoons white icing
Instructions
1. Line a baking sheet or tray with parchment paper or wax paper.
2. Add the butterscotch chips and peanut butter to a microwave-safe bowl and heat in short intervals, stirring until smooth.
3. Place the chow mein noodles and mini marshmallows in a large mixing bowl.
4. Pour the melted butterscotch mixture over the noodles and marshmallows, then gently fold until evenly coated.
5. Scoop the mixture into small haystacks on the prepared tray.
6. Add a small dab of white icing on top of each cookie.
7. Press red and green candy-coated chocolates onto each haystack.
8. Let the cookies set at room temperature or chill until firm before serving.
Notes
Stir the butterscotch mixture gently and do not overheat it, or it can become thick and hard to work with.
Fold the noodles carefully so they stay crisp and keep that classic haystack shape.
Chill the cookies if your kitchen is warm so they set faster and hold together better.
