Description

1 lb ground beef

1 tbsp olive oil

1 medium onion, chopped

1 green bell pepper, chopped

3 cloves garlic, minced

1 can kidney beans, drained and rinsed

1 can diced tomatoes

1 can tomato sauce

1 cup beef broth

2 tbsp chili powder

1 tsp ground cumin

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

1 cup shredded cheddar cheese

1/2 cup sour cream

2 green onions, sliced


Instructions

1. Heat the olive oil in a large pot or Dutch oven over medium heat.

2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

3. Stir in the chopped onion, bell pepper, and minced garlic, then cook for 4 to 5 minutes until softened.

4. Add the kidney beans, diced tomatoes, tomato sauce, and beef broth. Stir well to combine.

5. Sprinkle in the chili powder, cumin, paprika, salt, and black pepper. Stir until the seasonings are evenly mixed in.

6. Bring the chili to a gentle simmer, then reduce the heat to low.

7. Let it cook for 30 to 40 minutes, stirring occasionally, until thick and rich.

8. Taste and adjust seasoning if needed.

9. Serve hot with shredded cheddar cheese, sour cream, and sliced green onions on top.


Notes

For thicker chili, simmer uncovered for the last 10 minutes.

For more heat, add cayenne pepper or diced jalapenos.

Chili tastes even better the next day after the flavors have had time to blend.
