Description

Ingredients

2 3/4 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

2 large eggs

2 teaspoons vanilla extract

3 tablespoons granulated sugar

1 tablespoon ground cinnamon


Instructions

1. Preheat the oven to 375°F and line baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.

3. In a large mixing bowl, beat the softened butter and 1 1/2 cups granulated sugar until light and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract until smooth.

5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

6. In a small bowl, stir together the remaining 3 tablespoons granulated sugar and the cinnamon.

7. Scoop the dough into 1 1/2 tablespoon portions and roll each one into a ball.

8. Roll each dough ball in the cinnamon sugar mixture until fully coated.

9. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.

10. Bake for 8 to 10 minutes, until the edges are set and the centers still look slightly soft.

11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.


Notes

Do not overbake the cookies or they will lose their soft and chewy center.

If your kitchen is warm, chill the dough for 20 to 30 minutes before baking to help prevent too much spreading.

For the best cinnamon sugar coating, roll the dough generously so every cookie gets an even crust.
