Description

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon ground cinnamon

3 cups old-fashioned oats

1 1/2 cups semisweet chocolate chips


Instructions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.

2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in the eggs one at a time, then mix in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

5. Add the dry ingredients to the wet mixture and stir until just combined.

6. Fold in the oats and chocolate chips until evenly mixed.

7. Scoop the dough into rounded portions onto the prepared baking sheets, spacing them about 2 inches apart.

8. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are still soft.

9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.


Notes

For thicker cookies, chill the dough for 20 to 30 minutes before baking.

Do not overbake the cookies because they continue to set as they cool.

Add chopped pecans or walnuts if you want extra texture and a nutty flavor.
